Veggie Shepherd's Pie


I have never made shepherd's pie before, but my previous roommate used to make it semi-frequently in our old apartment. Of course, she made the real kind with meat inside, and perhaps I'll try that someday, too.

But this week, I made an Indian-inspired vegetarian shepherd's pie. The filling was mixed salad beans, mushrooms, carrots and onion in a coconut curry sauce. On top were mashed potatoes, made extra creamy because I added the leftover coconut milk from the sauce.

Although the end result was a bit mushy in terms of texture, I suppose that is how shepherd's pie is anyway. It had an absolutely delicious flavor, and the curry mixed with the mashed potatoes was great, if not very traditional.
