My First Frittata
I have never eaten a frittata before, much less made one. However, I had to buy a dozen eggs last Friday when I made cookies, and in less than two weeks, I will be traveling to South Korea for Easter. So, eat up the eggs I must.
Quiche would be an obvious choice for using multiple eggs, but I feel like it's often too rich; and I don't really have the space to roll out pie crust. Omelets are not my favorite either, as I tend to feel a bit sick after eating them--too much egg. I have always wanted to try a frittata, however, so this seemed like just the time.
When I first searched on www.foodnetwork.com, I spelled this dish "fritatta," which only yielded 4 hits. Spelled with the double "t" first ("frittata"), there were many more recipes to choose from. I settled on using this one as a guide, and I followed it quite loosely.
I baked my frittata in a pie plate, as it is my only sizable baking dish. So, I halved the recipe to begin with. The vegetables I used were broccoli, onion and mushrooms, though I wish I had added garlic. I sprinkled parmesan cheese on top of the cooked dish, but it would taste even better with cheese baked in.
In conclusion, I have discovered that frittata is pretty simple to make and comes in endless variations. Plus, it is not at all heavy or rich, but light and delicious as well as healthy. And going along with the semi-breakfast theme, I made some fried potatoes as a side dish (served with ketchup, of course).
