Pecan Pumpkin Pie
For this year's Thanksgiving potluck, I wanted to make something a bit different than traditional pumpkin pie. Actually, I'm a big fan of the regular kind, but I thought the many British attendees might prefer something a bit more exciting.
So I made these pumpkin pecan bars as a pie instead. It was quite a bit more work, but also turned out very well. However, you don't really need to make the shortbread cookie crust--a regular pie crust would be fine, especially as it got quite hard after refrigeration.
As it was a big hit at last year's meal, I also made apple crumble again this time. I used a combination of Granny Smith and Fuji apples, and though I've never baked with the latter, they seemed to work just fine.
