Broccoli Quinoa Salad
Last fall I made this broccoli quinoa salad from Bon Appetit for the first time, which was great for taking as a lunch at work or dinner at evening classes. I tried it again recently and made a couple of variations.
The first time I used pecans, but this time I added roasted almonds that needed to be eaten up. Instead of dates, which I didn't include before, I sprinkled a few raisins on top this time. Although I hated the broccoli "trees and raisins" salad with a passion as a child, just a few here were quite good.
To help the salad keep a bit better, I store the quinoa, nuts, cheese and/or raisins separate from the broccoli mixture, then assemble everything together before serving.
