Homemade Ratatouille


Earlier this year, I tried ratatouille for the first time when I found a big jar of it on sale at a fancy international supermarket. More recently, I tried making my own but without a recipe of course.

First, I roasted eggplant, zucchini and red and yellow bell peppers in the oven (in batches, as I have a slightly oversized toaster oven). At the same time, I sauteed onion and garlic, then added tomatoes and later the roasted veggies. 

I seasoned my ratatouille with salt, pepper and some mixed italian herbs. Then, I served it over another food new to my kitchen: bulgur wheat. Both were delicious and David thought so, too, despite his general wariness of stews.
