Fig Oat Breakfast Bars


In another attempt to use up the extra oatmeal in my flat, I made some oaty breakfast bars with jam filling from a recipe on the Quaker Oats website. An added bonus was that I could also use up a jar of fig jam, which was a Christmas present from my boss. 

I followed the recipe fairly closely, but as usual made a few changes. I added some sunflower seeds to the crust mixture, along with a few dates I had on hand. And, I used pecans instead of walnuts.

These bars turned out wonderfully, and they were absolutely delicious, too. Of course, most things made with butter are. They were also fairly filling for a breakfast bar, but I suppose not the healthiest option.
