Cleaning out the Pantry
I've got one week left in my house, and my pantry/fridge/freezer are still a little too full. I'm definitely going to have to make a donation to the food pantry, as well as pack up some things to take home. Nevertheless, I keep trying to use up food that I have already.
Friday night, I had scrambled eggs in corn tortillas for dinner. Last night, I used up almost all my cornmeal and frozen corn in this polenta recipe from Rachael Ray. Instead of butter, however, I added some smoked gouda cheese, which was on the point of molding. Although it might've turned out slightly lumpy because I didn't begin whisking right away, the polenta is absolutely delicious. It's much better than the plain kind I made, in the microwave, last summer.
