Summer Potato Salad


For my lunches last week, I made vegetable potato salad. It was somewhat similar to traditional potato salad, like my mom makes. However, I basically made it up off the top of my head, perhaps based on a variety of recipes I've read in the past.

In addition to potatoes, I used chopped celery, boiled eggs, frozen peas and blanched asparagus. For the seasoning, I combined mayonnaise, mustard, apple cider vinegar, salt, pepper and dill weed. It was delicious! And hopefully healthier than normal potato salad, thanks to all the green vegetables.
