Cauliflower Chickpea Salad



A couple of weeks ago, more than one of my Facebook friends shared a recipe for cauliflower potato salad, in which roasted cauliflower was substituted for potatoes, those evil carbs. Although I am in fact a carb lover, I am also a fan of cauliflower.

Thus, I decided to make cauliflower chickpea salad because I previously made a chickpea salad (similar to tuna salad) that was yummy. This new variation included yogurt, mayonnaise, spring onion, celery, cumin, turmeric, salt and pepper. It made a very tasty and healthy work lunch when paired with whole wheat pita bread.
