Rice and Lentils, Revisited


Earlier this month, I read an interesting recipe for mujadara, Middle Eastern style rice and lentils, which sounded intriguing. For the life of me, I can't remember where I first saw it, as I'm not familiar with the website. But I decided to give it a try anyway.

I've cooked lentils many times before (often in an Indian-inspired way and even together with rice in the rice cooker). But adding caramelized onions seemed like a great way to make a cheap, healthy meal even more delicious.

Although this lentil dish does take more time, mainly to caramelize the onions, I would say it's worth it. We enjoyed it alongside a cucumber creme fraiche salad. Next time I might double the recipe to make even more leftovers for workday lunches.
