Tofu Tomato Sauce


I tried a new variation on my regular vegetable-tomato pasta sauce recently. Along with the standard onion, carrot and mushroom, I added some finely chopped/crumbled tofu for a bit of extra protein.

Because of the strong flavors of the sauce, I figured the taste of the tofu wouldn't really be noticeable (a good thing when feeding a boy). But, I did forget that it would still look so pasty and white compared with the rest of the tomato sauce.

Next time, I'll try frying the tofu on its own first to give it a bit of color. And yes, there will be a next time because it tasted yummy, and I'm not the only one who thought so!
