Dinner with Genghis Khan
A popular meal in Hokkaido (the large island in northern Japan) is called Jingisukan, which is food cooked on a hot metal grill. It is named for Genghis Khan, the ancient warrior and ruler of the Mongol Empire, not that he necessarily ate it of course.
Jingisukan is another cook-it-yourself kind of meal, but there are fewer ingredients than in hot pot or even Korean barbecue. We ordered the basic all-you-can-eat set, which included two types of lamb, cabbage and bean sprouts.
Although I'm usually not too big on lamb (or meat in general), I quite enjoyed it. The meat was good quality and not too fatty. Just like in shabu-shabu, we got dipping sauces, which added extra flavor to the slightly charred food. It was yummy!
