Stir-Fried Choi Sum
To use up my eggs, along with David's leftover ham and cheese, I made a crustless quiche/frittata this weekend. I considered putting my favorite Chinese green, choi sum, inside as you would spinach, but opted for tomatoes and mushrooms instead.
Then, I stir-fried the greens in canola oil with a bit of salt and pepper. This side dish was very quick and easy, not to mention delicious. I can't believe I've never tried it before, but I definitely will again!
