Pumpkin Time!


As always, this Thanksgiving I made pumpkin pies for our potluck celebration. But, this year I happened to buy the jumbo-sized can of pumpkin because it was cheaper than the smaller one, which was organic.

So, I decided to make pumpkin bread with the rest, as it's not something we eat too often. I found this recipe on the Libby's pumpkin website, which sounded good and not too difficult. I used pecans and dried cranberries as my add-ins, plus a hint of maple syrup for fall sweetness.

The bread didn't quite turn out as well as I'd hoped, mostly because I should've cooked it slightly longer. However, the knife seemed to come out clean, and I didn't want the bread to get dry. Instead, it's a bit too moist, but the flavors are very nice at least.
