Going Bananas!

Yesterday extra-ripe bananas were on sale at Walmart, and I couldn't resist the temptation to make banana bread. This is my old youth leader Julie's recipe, sold at many bake sales in Branson. But, I did try to make it a little more healthy. I scanted just a bit on the sugar and substituted 2/3 cup whole wheat flour plus a tad of milled flax seed for some of the flour. And using English walnuts for the nuts, I even incorporated a bit of Omega 3s.

Banana Bread

1/2 cup oil
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon vanilla
2 eggs
3 crushed bananas
1 2/3 cup flour
1/2 cup chopped nuts

1. Combine ingredients in order, top to bottom. Grease and flour one loaf pan.

2. Bake for 1 hour at 350 degrees.
