Christmas dinner in Hong Kong

This year was the first Christmas we've been in Hong Kong, and David wanted to re-create the traditional English meal that his mum usually makes. For just the two of us, we decided to get a turkey breast, which would certainly be enough for a few Christmas-style meals as well as some leftovers perhaps for curry, chili, etc.

Unfortunately, the frozen turkey breasts I'd seen at Taste were sold out when I went back, but CitySuper had plenty of organic (and of course more expensive) varieties. We got a Diestel turkey breast (around 1.6kg), which had the skin on and was wrapped in netting.

It's been a few years since I've made a turkey breast. But in the past, I tried Ina Garten's recipe or something similar for a Thanksgiving or Christmas celebration with friends.

This time, I cooked our turkey breast using an herb butter similar to Ina Garten's recipe, but with parsley instead of the other herbs. However, I also referenced this turkey breast recipe and added onion, carrots and celery into the pan under the turkey.

Although the turkey took a bit longer to cook than I expected (perhaps due to the toaster oven, rather than a full-size oven), it turned out really well. It was very juicy, moist and flavorful. The veggies cooked alongside it were pretty amazing as well. 

To complete our Christmas dinner, we had some ham, Paxo stuffing balls, Ocean Spray cranberry sauce as well as more stuffing, pigs in blankets, roast potatoes, brussels sprouts and gravy all from Marks & Spencer. Several hours later, we finally ate our dessert of M&S Christmas pudding with brandy sauce.
